Price tracks the underlying via an oracle-fed mark; funding rate widens outside NYSE hours to price the carrying cost of holding a synthetic position when the underlying is closed.
Stock perps stay open when the underlying market is closed. If Apple posts earnings Thursday after the bell and reopens down 8% Friday, the perp mark can move sharply on low weekend volume. Size positions with the gap in mind.
